Mango Fruit Leather Recipe

Today, I prepared mango kombucha and ended up with a decent amount of leftover puree. I thought it would be perfect to turn that into some fruit leather, which I really enjoy and find quite simple to make, especially since the fruit was all prepped. I used my Cosori dehydrator for the drying process. This is my second dehydrator, and it’s definitely my favorite one to date.
For cutting up the mango, I used my mango slicer. It sure makes it so much easier to cut open a mango and definitely is a timesaver when you have many to cut open. I don’t miss the days of not having it.
For this recipe, I combined several that I found online. I didn’t want to add any sugar, but decided to add a little honey for extra sweetness. Some didn’t add water but without it I thought it was too thick. The lemon juice in the recipe helps preserve the color and enhance the flavor.
Once they’re done dehydrating, I put plastic wrap on top of the leather (left image), then flip it upside down (middle image), then i remove the silicone sheet (right image) and roll it up.

Mango Fruit Leather
Ingredients
- 3-5 Mango
- 2 Tbsp Honey
- 1 Tbsp Lemon Juice
- 1/4 cup Water
Instructions
- Add all the ingredients to the blender. Puree it.
- Add puree to Silicone dehydrator mats. After I've added enough to cover the mat, I tilt it back and forth to evenly fill the mat.
- Dehydrate at 135 degrees F for around 7 hours
