Cherry Pie Filling Recipe

I have four cherry trees in our orchard that in the previous years we’ve lived here we barely had any cherries. This year was almost overwhelming how many cherries we had. It was slightly infested with ants yet still had a good amount of good cherries to pick. It took me several times to harvest them. Being new to having cherry trees I wasn’t exactly sure when to harvest them. I believe I waited a little too long this year as birds and bugs were able to eat more.
These cherries are quite sour and tart, but I figured I’d try making a Cherry Pie Filling and see how it goes so that if its good, next year I know to start harvesting them soon. The recipe I found was super easy and only had a few ingredients. Basically water, cherries, sugar, and starch. It was from CrazyforCrust.com. I liked that it had low sugar content and easy to make. I didn’t follow the cooking instructions as close but I pretty much used the exact recipe they did.
Lately I have preferred to freeze my pie filling recipes, so once this recipe cooled down I poured it in an old plastic soup container. and put in the freezer for a later date to use.

- 1 tb Tbsp Cornstarch
