Banana Bread Recipe Using Freshly Milled Wheat

This is my first loaf of banana bread using freshly milled soft white wheat. I found this recipe in the in the Essential Home-Ground Flour Book by Sue Becker on page 206. I will not be publishing the recipe on my website so if you’d like to try it, I’d recommend buying the book. There are many other great recipes in there.
The recipe was super easy and didn’t take long to mix up. In addition to the freshly milled soft white wheat, there was baking powder, baking soda, salt, cinnamon, olive oil, honey, vanilla extract, egg, bananas, and I added candied pecans. I cooked it for about 50 minutes. It came out wonderful. This will be my new go to banana bread recipe.
If you’re looking to eat healthier grains, I suggest looking into milling your own wheat. I’m fairly new to it so I’m still learning. So far I find that it’s much easier to cook with the soft wheats. It’s the hard wheats that I’m still trying to find a recipe that I can get to turn out. If you’re new, I’d suggest checking out Felicia at Grains & Grit. She knows a great deal about cooking with milled flour.
